jodilyn: I made these pumpkin cheesecake Oreo bars last night.  Oh man, are they delicious. I used a low fat cream cheese, so they’re not as firm as I would like, but they are still SO GOOD. I also don’t have a food processor, so I just smashed the heck out of the Oreos with a can of beans (John helped). Also a good way to take out some rage. I bought a ginormous can of pumpkin and after making two pumpkin items, I still have half of it left, so the pumpkin baking continues with these. My coworkers and I are NOMMING on a few from Jodi’s batch right now. Heaven.
